Wheat salad and eggplant with feta and spinach

Ingredients

  • Wheat

    300 ml

  • Pesto

    150 ml

  • Lime

    1.5 Tbsp

  • Eggplant

    1 piece

  • Olive oil

  • Salt

  • Feta

    150 g

  • Spinach

    50 g

Wheat, boiled according to instructions on the package. In cereals ready add the pesto and the lime juice.

Eggplant cut into small cubes and lightly fry in a little olive oil. Season with salt, add the wheat and stir. Sprinkle with feta and spinach.
