Description
Candied and dry on top, full of sweet juice inside, bright beautiful Golden balls. Lovely dessert, perfect with ice cream, soufflé or mousse. A tangerine ball is very delicious behaves in a Cup of hot tea. Perfectly kept.

Cooking
Cook the syrup of water and sugar, gently stirring the solution strictly in one direction. Cool. The peeled tangerines to fold into the syrup and leave overnight. In the morning bring to boil and set aside until evening. In the evening bring to the boil and set aside until morning. Again morning, again evening.
After 2 days with a spoon to remove the tangerines from the syrup, allow to drain
Then dry the fruit under the grill (I have a convection oven) at T=70* an hour and a half. You can use a dehydrator or simply leave on the table at room temperature for two to three days.
