Chocolate mousse with cherry syrup
For chocolate lovers, cherry, air!

Ingredients

  • Dark chocolate

    200 g

  • Chicken egg

    5 piece

  • Salt

  • Cream

    125 g

  • Cherry

    1 kg

  • Brown sugar

    700 g

  • Sheet cherry

    20 piece

  • Water

    200 ml

  • Lemon juice

  • Vanilla

Cooking

Products for the chocolate mousse - I made 1/2 portions.

Detachable whites from yolks, proteins put into the refrigerator, yolks grind with the salt and vanilla white

In protein add the sugar, a few drops of lemon juice and mix

Protein whisk until stable peaks

Whipping cream, chocolate to melt and cool slightly. To the yolks add the chocolate, then whites and cream. Mix thoroughly and put into the refrigerator

Products for the sauce. I did 1/5 portions.

Cherries wash and remove pits, squeeze out cherry juice. I ground the berries into a grinder and pressed through several layers of cheesecloth.

Boil 5 min. cherry leaves in water, then throw the leaves themselves

Combine the decoction of the leaves, juice and sugar

Bring mixture to a boil over low heat ovarium to desired thickness. At the end of cooking you can add rum or brandy, cinnamon.

Serve the mousse, watering syrup

The mousse is airy and delicate, but for my taste too sweet, put less sugar or use very bitter chocolate
