Summer vegetable salad with mint dressing
Delicious salad with fragrant mint dressing gives a very summery, delicious and refreshing.

Ingredients

  • Zucchini

    2 piece

  • Green peas

    200 g

  • Beets

    1 piece

  • Carrots

    1 piece

  • Lemon juice

    40 ml

  • Olive oil

    75 ml

  • Soy sauce

    2 Tbsp

  • Oregano

    0.333 tsp

  • Thyme

    0.5 tsp

  • Parsley

    1 Tbsp

  • Mint

    4 piece

  • Sugar

  • Black pepper

  • Salt

Zucchini, peel on, cut into long thin strips and lightly fry in olive oil on heated pan. Do not add salt!

Place zucchini on paper towel to rid of excess oil.

and beets peel and cut into strips and fried (separately) in the pan. Vegetables do not add salt!

To prepare the salad DRESSING: place in a small bowl the lemon juice, oregano, thyme, parsley, crushed mint, a little sugar and a pinch of salt. Quickly whisk to combine. A thin stream pour olive oil and soy sauce, stir.

Spread on a plate zucchini,

put the beets

and carrot, pour with the dressing.

Then add green peas, pour remaining dressing and garnish with mint leaves and small slices of carrots.

Bon appetit! PS this dressing can be stored in the refrigerator for 2-3 days before serving, shake the container to use for fresh salad.
