Apple-cinnamon dessert with almond rice cream
I represent to Your attention a delicious, but at the same time very easy to prepare layered dessert that is suitable for fasting. It's a win-win elegant dessert for any occasion!

Ingredients

  • Almonds

    30 g

  • Water

    490 g

  • Sugar

    4 Tbsp

  • Cinnamon

  • Dried apricots

    90 g

  • Apple

    2 piece

  • Lemon juice

    3 Tbsp

  • Vanilla sugar

    1 Tbsp

Cooking

To prepare almond milk. To do this, pour the almonds in water and leave at least 4 hours, preferably overnight. Drain the water and swollen almonds blanched and cleaned.

Grind the almonds in a blender.

Add to chopped nuts 150 ml of water and 4 tablespoons of sugar and whip. Optionally, you can strain the milk through cheesecloth (I did not).

Apricots pour 90 ml of boiling water. Allow to stand for at least 30 minutes.

Chop the remaining apricots in blender with water.

To prepare the cream. Grind rice in a coffee grinder into flour.

In a small saucepan, mix almond milk and 250 ml of water with crushed rice. Stirring constantly, bring mixture to a boil. Cook until thick. Remove the pan from the heat. Add in cream, cinnamon (I added 1 tsp) and 2 tablespoons chopped dried apricots. Allow to cool.

To prepare the Apple layer to peel the apples, grate them on a coarse grater and sprinkle with lemon juice.

Mix the chopped apples with dried apricots, vanilla sugar and cinnamon (1 tbsp).

Spread Apple mixture over the glass, put the cream and sprinkle with cinnamon.
