Ingredients

  • Quinoa

    430 g

  • Red onion

    1 piece

  • Garlic

    1 tooth

  • Cherry tomatoes

    10 piece

  • Beans

    250 g

  • Olive oil

    4 Tbsp

  • Lemon juice

    2 Tbsp

  • Basil

  • Pumpkin seeds

  • Salt

  • Black pepper

Cut the onion into thin half-rings (if you don't like raw onions, reduce the amount).

Prepare the dressing: garlic press out into a bowl, add the butter, lemon juice, salt and pepper.

My tomatoes were larger and I cut them in half lengthwise.

Mix the quinoa, onions, beans, tomatoes and Basil, top with seasoning and stir. Try enough salt.

On top sprinkle with pumpkin seeds and Basil.
