Salad
We're fed up with her husband three weeks of Fasting and fries and grits! I decided to try to combine a salad of fresh and roasted vegetables, made spicy sauce and we had a great dinner! I want to share with You, I'm sure this salad will attract not only those who observe lent! Come on in, help yourself!

Ingredients

  • Eggplant

    1 piece

  • Zucchini

    1 piece

  • Tomato

    2 piece

  • Cucumber

    2 piece

  • Pepper

    1 piece

  • Red onion

    1 piece

  • Cabbage

    200 g

  • Cilantro

  • Sunflower oil

    50 ml

  • Soy sauce

    50 ml

  • Lemon

    1 piece

  • Pepper Cayenne

    1 pinch

  • Coriander

    1 pinch

  • Garlic

    2 tooth

  • Allspice

    1 pinch

Cooking

Cut into fairly large cubes of eggplant and zucchini.

In a heated pan, pour sunflower oil and fry until Golden brown over high heat the zucchini.

Place on a napkin to remove excess oil.

With eggplant will do the same as with the zucchini.

Arbitrarily chop the cabbage and put in a salad bowl, little salt and lightly remember hands.

To add the cabbage chopped coarsely tomatoes, peppers and cucumbers. Slice rings of red onion and add to the bowl.

In a separate bowl these ingredients make the sauce-the dressing, stir and pour evenly over the vegetables.

Add to fresh vegetables sauteed zucchini and eggplant and mix gently. Let sit in the fridge a couple of hours. When submitting sprinkle finely chopped cilantro or parsley to taste.
