Cooking
For this dish I used a rice Indica Gold.
Rice rice in carolco. add the diced carrots and sweet peppers, raisins and a cinnamon stick.
In a small amount of water to brew the saffron strands, drain, add remaining water. Pour the saffron water into a saucepan with the rice, add mint syrup and a pinch of salt.
Bring to boil, cook for 10 minutes, then leave under cover for another 10 minutes.
Meanwhile, in skillet, heat vegetable oil, add the zest, curry, cinnamon and turmeric. Cook 2 minutes while stirring, remove from heat.
Add spicy mixture to rice, mix well. Add sugar to taste, mix well.
Arrange the pilaf on plates, sprinkle with chopped pistachios, pour mint syrup, orange juice and serve.
