Cooking
To prepare this dessert, I chose the rice varieties "Arborio" from TM "Mistral"
Wash and raisins along with candied fruit, pour hot water. Leave for 15 minutes soak. If candied fruits are soft, you can skip this step. As for the candied fruit, there's a matter of taste (I chose the candied coconut, papaya and pineapple). With raisins and candied fruit drain the water and dry them with a paper towel. Then the candied fruit cut into small pieces, nuts finely chopped.
Boil the milk with half lemon peel.
Then add a pinch of salt and rice. Reduce the heat and cook for about 25 minutes stirring occasionally. Cooked rice cool, stirring from time to time with a spatula.
To the cooled rice add the candied fruit, nuts, zest and gently stir.
The yolks separated from the proteins and add to the rice. Proteins whisk in a solid foam and gently introduced into the rice mixture.
Split mold or a portion of the tins carefully greased with oil, sprinkle bread crumbs (crumbs), spread the rice weight, even out and send in a preheated 180°C oven for 35 minutes.
Ready pie to cool, before serving sprinkle with powdered sugar and you can treat yourself!
