Fagottini with rikoto, honey and ginger
And again we go to Italy, this time we will taste Fagottini!

Ingredients

  • Semolina

    400 g

  • Butter

    60 g

  • Water

    180 g

  • Cheese

    400 g

  • Honey

    250 g

  • Raisins

    50 g

  • Flour

    3 Tbsp

  • Yolk egg

    2 piece

  • Orange zest

  • Ginger

    1 Tbsp

For this recipe the needed semolina flour, but since we don't have it on sale, it is possible to semolina grind in a coffee grinder. I did just that. After ground grits, sift it into a large bowl in the center to put a soft, diced butter.

Pour 180 ml of warm water. Knead soft and elastic dough, if necessary add more water or semolina. Cover with a cloth and leave to the side.

Meanwhile, prepare the filling. Cottage cheese or ricotta grind with honey (150g) and egg yolks

Add the grated ginger, orange zest and flour, add pre-soaked and well squeezed raisins. Mix thoroughly.

Divide the dough into 3-4 parts. Roll out thinly and cut out circles with a diameter of 14 cm. On each circle put the filling.

To form a half moon and good press edges with a fork. Bake in a preheated 180 degree oven until Golden brown, about 20-25 minutes. You can also fry in vegetable oil. I baked it in the oven.

The remaining med heat with 2-3 tbsp water (must be boiling) and pour them fagottini or just sprinkle with powdered sugar.
