Lemon-coconut cake
Surprisingly delicious and delicate cake. The combination of coconut and lemon is very unusual, but gives a stunning effect!

For the test, and for cream use small brown sugar from the Mistral.

First, prepare the cream. Remove from the lemon zest and squeeze the juice.

Mix the juice and zest with the eggs and sugar. Put warm. As you begin to appear bubbles, remove from heat.

Add the butter, a little whisk until smooth.

Ready cream put into the cold to warm.

Now make the batter. Mix soft butter with coconut.

Add the egg, sugar, flour, soda. Knead the dough.

The dough is put into the form (I 26 cm). Moulded bumpers.

Into the cooled cream, add the cheese and flour. Stir.

Pour the cream on the dough, sprinkle with coconut and put in the oven at 180 C for 50 minutes.
