To cook the couscous for a few, soak it for 5-10 minutes
Ready rump and drizzle with olive oil, mix with cumin, salt.
Rubbed on a fine grater, zest the lime, squeeze the juice. The flesh of the avocado cut into small cubes, mint, finely chopped (1-2 tbsp), mix with the zest and citrus juice,
Fill with a mixture of couscous. Salad served warm or cold, sprinkled with nuts. To taste add 2 tbsp of honey.
