The basis of this treat - traditional combination of pineapple and coconut. This recipe from blogger Dellamisa very simple, but the result is quite can make you happy. Lenten pastries can be delicious and original!

Cooking
Mix the dry dough ingredients: sifted flour, coconut, sugar (brown TM "Mistral"), vanilla and baking powder.
Wet ingredients: olive oil and syrup from the pineapple (about 200 ml).
To combine dry and liquid ingredients with a mixer or just a spoon. In the dough you can add a few finely chopped Kolechko pineapple.
The remaining pineapple rings cut into segments. Take a little sugar for dusting of the cupcakes.
The dough to distribute the forms of muffins. In each blank insert for 5 of pineapple segments; midway sprinkle with sugar. Bake for 15-20 minutes.
Muffins are rather dense, with a rich flavor and a crispy sugar crust.
