Cooking
In a large bowl mix the flour, pinch of salt, olive oil and 1 Cup of water. Knead elastic dough. Divide it into 4 equal balls and leave under a towel for at least an hour
Wash spinach, put in saucepan, season with a little salt and simmer. Drain the liquid, squeeze the spinach mix with 2 eggs and 2 tablespoons of Parmesan. Soak bread in milk and mix the spinach and cottage cheese
On a floured table roll out as thinly as possible to one of the balls of dough. Single layer spread in greased with olive oil form, then re-grease and put another.
Spread the filling on the dough, flatten slightly and brush with olive oil. Make a spoon in spinach deepening, put in each a little butter and gently pour the raw egg. Sprinkle with salt, pepper and remaining cheese.
