Scrambled eggs with eggplant
Good option for a hearty Breakfast or a light lunch.

Ingredients

  • Eggplant

    1 piece

  • Onion

    1 piece

  • Chicken egg

    2 piece

  • Soy sauce

    1.5 Tbsp

  • Salt

    0.125 tsp

  • Black pepper

    0.125 tsp

  • Vegetable oil

    1.5 Tbsp

Cooking

If the eggplant skin is tough, cut it off. Eggplant and onion cut into dice.

Place the vegetables in a preheated with oil pan. Fry until soft and light Golden brown. Pour soy sauce, salt and pepper. Cook, stirring occasionally, another minute or two.

Reduce the heat, beat in the eggs and cook under cover until done eggs. Better if the yolk remains liquid.
