Potato pancakes with salted salmon and mustard sauce
A wonderful dish for voskresnaja lunch. Crispy potato pancakes are perfectly combined with soft and tender salmon, and mustard sauce adds a special bright flavor.

Ingredients

  • Potatoes

    700 g

  • Chives

    2 Tbsp

  • Butter

    60 g

  • Olive oil

    3 Tbsp

  • Salmon

    200 g

  • Mustard

    2 tsp

  • Sugar

    2 tsp

  • Salt

    0.5 tsp

  • Vinegar

    1 Tbsp

  • Olive oil

    50 ml

Preheat the oven to 150 degrees. Peel the potatoes, grate on a coarse grater and squeeze out excess juice. Put the grated potatoes in a bowl and add finely-chopped chives, melted butter and a little salt and pepper.

Heat the oil in a wide frying pan over medium or high heat. Put a half spoon of potato pulp to the pan and fry on both sides until Golden brown.

Dry on a paper towel.

Spread on a baking sheet. Warmed in the oven for 5-7 minutes on 150 degrees.

Salmon cut into thin slices.

For the sauce: mix the mustard, sugar, salt and vinegar in a bowl and stir to dissolve the sugar. A thin stream add the olive oil and whisk to obtain a homogeneous sauce.

In a bowl place a pancake, top with a slice of salmon and pour the mustard sauce, repeat.

Decorate with sprigs of chives.
