Risotto with pumpkin and mushrooms
I offer vegetarian pilaf is easy to prepare, but very tasty!

Ingredients

  • Vegetable oil

    2 Tbsp

  • Onion

    0.5 piece

  • Garlic

    2 tooth

  • Pumpkin

    100 g

  • Mushrooms

    140 g

  • Figure

    60 g

  • Broth

    350 ml

  • Parsley

  • Black pepper

Cooking

Cut the pumpkin in cubes.

Slice the champignons.

Preheat a skillet vegetable oil over medium heat. Cut the onions, put in pan, dopaste garlic (squeezed through a garlic press) and saute for 3-4 minutes. Put in a pan the pumpkin and mushrooms, saute about 5 minutes.

When cooking risotto, I used the Mistral rice Basmati.

Separate the parsley leaves from the stems and finely chop stems.

Add to the pan the rice, stir well.

Pour in the broth mixture and add parsley. Cover skillet and cook over medium heat until the rice is tender (about 25 minutes).
