Chicken Mexican
Easy and simple to prepare dish. Depending on Your desires can be both acute and not. In our family it love both adults and kids.

Ingredients

  • Chicken fillet

    800 g

  • Carrots

    230 g

  • Onion

    180 g

  • Corn

    1 can

  • Tomato paste

    2 Tbsp

  • Garlic

    2 tooth

  • Olive oil

    2 Tbsp

  • Salt

    1 tsp

  • Black pepper

  • Peppers red hot chilli

  • Pepper

    1 piece

Cooking

Cut filet arbitrarily. I cut medium-sized pieces.

Onion cut into half rings. Carrots - dice or cubes.

In a pan pour olive oil and sauté the onions and carrots for 5 minutes.

Add to the onions and carrots and chicken pieces, continue cooking for another 7-10 minutes, stirring occasionally.

In a pan pour the corn (without liquid), add black and red pepper, and salt. Then pour in tomato juice (250 ml of water and 2 tbsp of tomato paste). Stir, cover, reduce the heat to low and simmer for 30-40 minutes. At this stage you can add 1 red bell pepper, cut into cubes, the dish will turn out even more colorful. I have, unfortunately, it was not. 5 minutes until cooked add 2 cloves of minced garlic. Optionally, you can add finely chopped greens of dill or parsley.
