Description
This recipe I told a friend. She worked for a long time in Greece and recently returned due to the crisis. Such vegetables in Crete eat at the post. I tried to cook them and tell You with complete accuracy and confidence is a very tasty dish. And most importantly, virtually waste-free manufacturing. I loved it from the first spoon. I advise everyone to fast and not only.

Cooking
To cut off the tops and clean the inside of peppers and tomatoes. From tomatoes to leave aside in the filling.
From potatoes to cut out boats with high sides. If the zucchini is large, cut into two parts, clean the insides. For each vegetable write kryshechka.
In a blender, chop the onions, the insides from the tomatoes, potatoes, zucchini.
To the mixture add the juice from half a lemon, parsley, oregano, salt and rice.
Stuff the vegetables. On the bottom of the pan pour the oil (for the days without oil, but allowed hot food, you can butter and do not add). Put in layers, first potatoes, then tomatoes, peppers, zucchini.
All of the vegetables to close the lids.
Fill with water to hide the vegetables.
Close the dish and cook on slow heat for 30 minutes.
Preheat the oven to 220 gr. Bake for another 15-20 minutes for the crust. I have pictures of a different pot. We had to gather at the cottage and finish there.
