Healthy and delicious mini-quiches with a light ginger ostrinkoy. Wonderful Breakfast, and also very light (as in composition, and cooking in the microwave)!

Cooking
Beat eggs with sugar.
Mix the egg mixture with curd and Hercules.
Apple peel and seeds, grate coarsely. Ginger RUB on a small grater, to remove the fiber. Add fruit to cottage cheese mixture.
Pour the batter in silicon moulds for muffins (I got 10 pieces). To cook in the microwave in two batches for 3 minutes.
A little to cool and serve with sour cream or your favorite jam, garnished with candied ginger. Very tasty!
