Beets stuffed with rice and vegetables
An easy and nutritious dish - it is, incidentally, perfect for a vegetarian menu and of the contest "Fast from Moulinex"

Ingredients

  • Greens

  • Corn

  • Green peas

  • Onion

    2 piece

  • Carrots

    1 piece

  • Beets

    4 piece

  • Vegetable oil

  • Black pepper

  • Salt

  • Mushrooms

Cooking

Cook until soft beets in the skin.

Clean the beets from the skin. Remove the pulp from the beets to get cups with a wall thickness of 1 cm Crushed pulp aside for stuffing.

Boil the rice until almost cooked.

Onion and vegetables and fry in vegetable oil.

Shredded beets add to sauteed vegetables, and add the rice. Add salt and pepper to taste and stir.

Fill the beets with this mixture and cover with beet cap.

Bake beets in the oven for 30 minutes at a temperature of 160 degrees.
