Buttermilk biscuits
"Buttermilk Biscuits" Cookies from Fritz Brenner for Nero Wolfe, with my changes! At Fritz biscuit was savory and served as a "cookies for a Sunday evening snack". I have it sweet, but... with cumin and black sesame. Buttermilk biscuits comes out light, crisp and is eaten on hurrah.

Ingredients

  • Flour

    300 g

  • Salt

    0.333 tsp

  • Sugar

    2 Tbsp

  • Soda

    0.5 tsp

  • Butter

    4 Tbsp

  • Buttermilk

    180 ml

  • Egg white

    1 piece

BUTTERMILK is low-fat the liquid that remains after cream is churned into butter. For us, the buttermilk not too familiar. In some national cuisines it is an extremely popular ingredient. It is a milk 0,5 % fat with a very specific "yogurty" flavor. The RECIPE of BUTTERMILK at home: add a glass of milk with 1 tbsp. spoon of lemon juice. Put in a warm place for 15-20 minutes, until thickened. Your buttermilk is ready for use.

Sift the flour. Add sugar,

salt and soda. Mix well. Add butter and chop it with a knife or using a kitchen processor until a soft crumbly mass.

Slowly pour in the buttermilk and

knead the dough.

Put the dough on a flour Board and knead for another 1-2 minutes.

Then roll out the layer

thickness of 1 cm

Take a glass and

cut out this formation of circles of the desired shape.

Put on a baking tray lined with paper and

grease the surface with beaten egg whites.

Sprinkle cookies with sesame seeds

and cumin (this is optional).

Bake cookies in preheated oven to 210°C for 10-12 minutes.
