Thick tomato soup with white beans

Sugar TM Mistral before cooking to soak in cold water for about 4 hours. After that, rinse the beans and place in a pan with water in the ratio 1:5. Put on fire, bring to boil and cook over high heat for 10 minutes, then the fire abated and cook until tender, about 2 hours. Add salt to taste at the end of cooking. Beans drain in a colander, drain the excess water.

To prepare the marinade for the feta. In a bowl, combine paprika, chilli flakes, coriander, herbes de Provence and olive oil. Mix well.

Feta cut into small pieces.

Feta spread in a tray and pour the marinade. Cover with cling film and put in the fridge.

Onion peel and cut into half rings.

Peel the carrot and cut into thin strips.

One stalk of celery and chilli (remove the seeds) cut into rings, garlic plates.

In a saucepan with a thick bottom to heat the oil. Stew until tender the onions, carrots, celery, chilli and garlic.

Then add the tomatoes and simmer for 10 minutes under the lid after boiling.

Pour in the wine. Mix well.

Add the beans, olives, spices, salt, pepper and sugar (I poured 200 ml of hot water). Bring to boil and cook over medium heat, about 7 minutes. Remove from heat, cover and let stand.

Soup pour into portioned plates. Put a piece of marinated feta.
