Description
This cookie is prepared in the southern Italian region of Sicily. There you can buy Pasticcini di pasta con Le mandorla all year round in any candy store. The cookies must be stored unopened in the refrigerator so it doesn't dry up and always stayed soft.

Cooking
Almond pour boiling water for 10 minutes, then drain the boiling water and peel almonds.
Almonds to grind into flour.
Grind the peel into a fine paste.
Mix the almond flour, sugar, paste of candied orange peel, honey. Add the olive oil cold pressed.
Add the egg whites, knead the dough well.
The almond mass is put in a pastry bag and isolate the cookies on a baking sheet, covered with baking paper and garnish with almonds. Bake for 12-15 minutes at the temperature of 160 degrees. Be careful not to desiccate the cookies.
The cookies turned out sweet, crispy, soft on the inside.
