Cooking
For starters we are gonna wipe the flour and butter in the buttery crumbs.
Then add starch, sugar (75 g), 1 egg and 1 egg yolk (the protein to go in the fridge), salt, slaked soda, the zest from two tangerines.
Knead the dough, form it into a ball and put into the fridge for an hour.
Meanwhile, let us tangerines: peel and white fibers, divide into segments. In a saucepan, melt the 2 tbsp sugar and 1 tsp of water. Once the syrup is boiling, pour in the alcohol and boil the slices for 5 minutes. To put on a cold plate greased with butter.
