Puntarelle with anchovy sauce
Puntarelle alla romana. Traditional Roman salad puntarelle – puntarella the sliced shoots with anchovies, garlic and olive oil. In Rome you can buy this salad in the late fall and winter.

Ingredients

  • Chicory

    300 g

  • Garlic

    1 piece

  • Anchovies

    6 piece

  • Olive oil

    3 Tbsp

  • Vinegar

    2 Tbsp

Cut into strips and drop into a Cup of cold water.

Salted anchovies in oil.

Pounded in a mortar the garlic, the anchovies, in the end add olive oil.

Puntarelle sprinkle with wine vinegar and pour the sauce from the mortar. Salad puntarelle Alla Romana is ready. Delicious Roman salad.
