Popular Spanish dish. There are many recipes and different combinations of vegetables, chicken, rabbit. My rice with the vegetables in the vegetable broth and olive oil. A healthy, vegetarian dish, tasty and visually appealing.

Cooking
For vegetarian rice, boil vegetable broth in boiling water, lay leeks, carrots, cabbage, celery, parsley and cook for 15 minutes, the broth should 3 times more in volume than the dry rice.
Cut vegetables and fry in oil.
At the end of cooking add the tomatoes, wine, spices, simmer.
In wide flat dishes spread prepared vegetables, pour the desired amount of vegetable broth, cook for 10-15 min.
fill the desired amount of rice: 50 grams of dry rice per serving, 1 volume figure 3 volume of fluid. Cook without covering for 20 minutes, turn off heat, cover and leave for 10 minutes. Serve in the same dishes, serve plates hot.
Decorate with slices of fried eggplant or other means. For this dish you can use any vegetables: fresh, frozen, natural, vegetable canned, mushrooms, always get a great result.
