Couscous with vegetables and mushrooms
Hot dish for lunch or dinner. Can vary according to your taste, making it spicier or Vice versa. You can meat is a matter of taste. Recommend.

Ingredients

  • Eggplant

    2 piece

  • Zucchini

    2 piece

  • Pepper

    2 piece

  • Tomato

    3 piece

  • Onion

    1 piece

  • Mushrooms

    300 piece

  • Salt

  • Couscous

    250 g

  • Parsley

    25 g

  • Black pepper

Prepare the couscous.

This will require the couscous 250g and 0.5 liters of water, salt and spices ( if desired, you can use a bouillon cube). Pour water into the pan, put salt, spices what you like (or bouillon cube)and bring to a boil. While stirring, add couscous, bring to boil, remove from heat and cover with lid. After 20 minutes the couscous is ready.

Eggplant cut into rings and fry in vegetable oil.

Zucchini also cut into rings and fry in vegetable oil.

Tomatoes cut into rings or half rings and fry in vegetable oil.

Onion cut into half rings, to fry on vegetable oil until soft.

In sautee onions add the mushrooms and fry all until tender.

Pepper finely chopped and fry in vegetable oil.

All fried vegetables and mushrooms folded into one container, salt, pepper to taste mix everything. Here you can add pre-cooked couscous (it's optional or to taste).When serving, sprinkle with parsley. The dish is ready. Bon appetit.
