Cooking
Rinse the cleaned squid to drain the water.
Mix the minced meat with finely chopped garlic and parsley, salt, pepper, and season sweet liqueur wine. (I have at the time of preparation of liqueur wines were not available, added dry red.) In some other versions of this recipe, the stuffing scroll and a small piece of chorizo, or a little very finely chopped bacon.
Stuff the squid meat filling.

Fry until Golden brown on preheated sunflower oil.
In a separate pan fry in olive oil chopped onions, then add pureed in a blender the tomatoes, the Bay leaf, the tentacles of squid. Saute for 10 minutes on low heat until sauce.
Fold squid in a stewing pot, pour the sauce. Add white table wine, so to cover the carcass of a squid. Add the remaining salt. Cover, simmer on low heat until cooked (approximately 20-30 min). Squid meat should be soft.
For a side dish you can serve boiled mealy potatoes or rice. Bon appetit!
