Cooking
In a pan melt butter with 2 tablespoons of honey.
Add plums (cut into quarters) and cook, stirring occasionally, about 5-6 minutes.
Plum soft and covered with honey. Put the cooked plums and juice from the pan into a bowl.
In a small saucepan, put the egg yolks, nutmeg, the wine and 4 tablespoons of honey. Put the pan on top of a larger pot of boiling water, making a water bath and mix well, about 8 minutes. The mass turns light yellow in color.
Remove from heat and stir Sabayon for about 1 minute.
Pour the cooked Sabayon in a small baking dish.
Put on top of cooked plums and pour the juice from them.
Put in a pre-heated broiler and cook about 1-2 minutes until lightly Golden.
