Coconut muffins with fruit
Mouth-watering cupcakes with an airy structure and a wonderful aroma! Their peculiarity is that they don't get stale, while remaining soft and fresh!

Ingredients

  • Flour

    200 g

  • Sugar

    150 g

  • Salt

    1 g

  • Butter

    100 g

  • Coconut milk

    150 g

  • Chicken egg

    2 piece

  • Coconut shavings

    15 g

  • Leavening agent

    10 g

  • Fruit

    100 g

Cooking

Cooking time is given without the baking time. Whisk sugar and salt with butter.

Add the eggs and coconut milk. Mix well.

Mix the flour, baking powder and coconut flakes.

Stir flour mixture with the beaten ground. It's a very soft, almost like pancakes dough.

Cut into cubes fruit.

Using a spoon or pastry bag to fill the silicone molds with dough.

On top lay the sliced fruit.

Bake at 180 degrees for 20-25 minutes depending on oven
