Xinda
Thick bean soup with lemon juice, the traditions of the South-Eastern part of the Peloponnese. This Xanadu (otherwise lapada acid) is prepared without animal fat and vegetable fat, a dish for the strict days of the Christian posts, when it prohibited the use in food of vegetable oil. I'd add, a great option for protein diet food!!!

Ingredients

  • Beans

    300 g

  • Carrots

    2 piece

  • Onion

    1 piece

  • Celery leaf

    0.5 coup

  • Lemon juice

  • Flour

    1 Tbsp

  • Salt

  • Peppers red hot chilli

    1 piece

  • Water

Cooking

Beans cover with water and leave overnight.

In the morning, pour fresh, cold water so that the water level was 3 fingers above the beans. Boil until soft. I use a pressure cooker, cook beans for 15-20 minutes. The beans take 2-3 ladle of broth.
