A very popular Greek dish. Spicy, flavorful... the website has several recipes for rabbit stifado, but, to my disappointment, none of the recipes are essentially the stifado is not (no offense to the authors). As someone who lives in Greece, stifado cooking 1-2 times a month, consider themselves entitled to make an explanation. Go to any house, knock on any door and ask the girls:"What is the stifado?"You answer is stewed in tomato sauce meat with lots of small onions, cooked whole!!! In supermarkets and markets in a number of onions you will always find onions for stifado. The amount of onions equal to the amount of meat! It is a solid dish that does not require a side dish! And most importantly, if you ask "What are the main spices are placed in a stifado?" Cooking
Rabbit washed, cut into portions.
In a pan pour the oil, into the hot oil to put the pieces of rabbit, add the garlic and rosemary.
Pour the wine and stew the rabbit for 5 minutes.
Tomato juice and fresh tomato. Add water or vegetable broth so that all the ingredients are covered with liquid.
Proverjaem all about 40 minutes until soft onions and rabbit. The sauce should thicken. Don't forget salt, pepper, sugar, allspice, Bay leaf, cinnamon and cloves.
The dish is ready! Eat with white bread!
