Carrot-pineapple cupcake
Magic to the taste, gentle, slightly humid, thanks to the carrot cupcake. Buckwheat flour and cane sugar give the cake a caramel flavour. Gift for Zarina Zzoloto.

  • Carrots

    140 g

  • Orange

    1 piece

  • Raisins

    50 g

  • Walnuts

    40 g

  • Vegetable oil

    100 ml

  • Yogurt

    50 ml

  • Chicken egg

    2 piece

  • Brown sugar

    110 g

  • Buckwheat flour

    85 g

  • Flour

    85 g

  • Leavening agent

    0.5 tsp

  • Soda

    1 tsp

  • Spices

    1 tsp

  • Butter

    1 tsp

Magic to the taste, gentle, slightly damp thanks to the carrot cupcake. Buckwheat flour and cane sugar give the cake a caramel flavour. Gift for Zarina Zzoloto.

Rinse the raisins, let them drain well. Add the zest from the orange and juice half of the fruit. To leave for the night.

Carrots grate on a fine grater.

Mix both kinds of flour.

Separately mix the eggs, oil and yogurt. To the flour add brown sugar, spices, soda, baking powder, raisins, rind and juice. Mix well, add the egg-oil mixture and carrots.

Put the dough in a pre-oiled with form. Bake in preheated oven at 180 gr. 45-55 minutes. If the top gets too brown, cover the form with foil and reduce the heat.
