Salmon fillet with rice in coconut milk
Very quick and delicious recipe. The fish turns out amazingly tender, juicy and flavorful.

Ingredients

  • Salmon

    250 g

  • Onion

    1 piece

  • Garlic

    1 tooth

  • Chili

    1 piece

  • Ginger

    1 tsp

  • Turmeric

    1 tsp

  • Cumin

    1 tsp

  • Vinegar

    2 Tbsp

  • Tomato paste

    1 Tbsp

  • Tomatoes in own juice

    200 g

  • Coconut milk

    200 ml

  • Sugar

    1 tsp

  • Spices

  • Figure

Fill a pot with water, salt the. Add turmeric and when the water boils put the bag of rice and cook as directed on package.

In a little olive oil to fry the onions and garlic finely chopped. Chili peppers remove seeds and cut into small dice. Salmon cut into small reservoirs ( without skin), salt and pepper.

With fried onions, garlic add tomato paste, chili pepper and tomatoes in their own juice. I have the tomatoes peeled and already cut into cubes. Saute 5 minutes over medium heat. Add salt, cumin, ginger, sugar, vinegar. Carefully mix everything and bring to boil ( it would take 2 min).

Add the coconut milk, stir and put the pieces of salmon. The fire abated and cook 15 minutes with the lid closed.
