Three-layer shortbread cake
It was evening, there was nothing to do and I decided to bake a cake. There are many recipes of this cake, but most in the summer version: with apples, plums, berries... I'm done for the season, with cottage cheese. However, it was not in stock of some products, and I was rebuilt on the go. The results of this "adjustment" I now offer:

Ingredients

    1.5 cup

  • Chicken egg

  • Cream

    200 ml

  • Leavening agent

  • Butter

  • Semolina

    2 Tbsp

  • Coconut shavings

    2 Tbsp

Prepare the dough: butter chop with flour, add the egg, whipped with sugar, 2 tablespoons of cream and knead thick dough. Put in refrigerator for 30 minutes.

Prepare the filling: cheese grind, add 2 egg yolks, sugar, zest and lemon juice, raisins, vanilla, semolina - grind into a homogeneous mass. I had a little cheese and I added whipped cream.

The dough is distributed on the form, making bumpers, put in the oven for 15 min.

On podmechenno batter poured cottage cheese (the addition of cream, the mass was liquid) and put to bake for 30 minutes at T 180*C.

Proteins are whipped into a foam, added sugar and shavings of coconut, carefully spread on baked cheesecake fill and put to dry in the oven for 1 hour at T 120 ° C.

After an hour pulled from the oven, cooled and pulled out of shape.

The result is a reusable baking I got the top and the bottom layer is dry and crisp, while the middle because the cream turned out soft and juicy. The result exceeded my expectations.
