Tomato pesto
Another version of the famous sauce, which perfectly complement the dishes of pasta, rice or serve as a flavorful spread for toast. The aroma of the sauce is traditionally Basil, but in a more mild flavor are harmoniously woven into the tomato acidity.

Ingredients

  • Basil

    1 coup

  • Tomato

    2 piece

  • Olive oil

    2 Tbsp

  • Pine nuts

    30 g

  • Parmesan

    40 g

  • Ricotta

    50 g

  • Garlic

    1 tooth

  • Salt

    0.5 tsp

  • Black pepper

Dense, meaty tomatoes cut into cubes, put in a sieve, sprinkle with salt and leave for 10 minutes

Only have Basil leaves and tender tops

In the bowl of a blender put the Basil, tomatoes, pine nuts, grated Parmesan, slices of garlic

Grind the contents. Add the ricotta and olive oil, add a pinch of salt and again grind

Put in a bowl, doselevel to taste, add ground black pepper to taste, mix and put in a jar. Keep the sauce should be refrigerated. Before storing, pour the sauce on top of a thin layer of olive oil.

Can just try with a piece of black bread. Very tasty!
