Rustic muffins with oat bran
Today I offer to cook muffins with oat bran. Wonderful, fluffy, with a crispy crust.

Ingredients

  • Rye flour

    200 g

  • Flour

    280 g

  • Bran

    3 Tbsp

  • Olive oil

    2 Tbsp

  • Yeast

    20 g

  • Salt

    0.5 tsp

  • Sugar

    1 Tbsp

  • Yolk egg

    1 piece

  • Water

    375 ml

1. In a Cup mix 2 types of flour. Add yeast and grind by hand. Add bran, mix well.

2. Add sugar, salt. Make a deepening in the middle. Pour in the oil.

3. Then pouring the water gradually and knead homogeneous dough.

4. Transfer the dough to a surface sprinkled with flour, and knead for about 10 minutes. The dough should be soft and very elastic. Put the dough in a bowl, sprinkle with oil. Cover with cling film and allow to rise at room temperature. The volume of the dough should double in size.

5. Punch down the risen dough and lightly knead. Divide into 8 equal parts. Formed into rolls, I made the knots, and lay on a baking sheet, at a distance of 5 cm from each other.

6. Slightly flatten the rolls with your palm, cover the pan with plastic wrap or a clean towel and allow to rise again for 30-45 minutes. Preheat the oven to 190C. Grease muffin egg yolk, sprinkle with bran and bake for about 25 -30 minutes. Remove and cool on a wire rack.
