Cooking
Preheat the oven to 180 gr. Round cake pan grease and flour. I baked a cake based on the norm and used a small rectangular shape. In a bowl sift flour, soda and salt.
In another bowl, combine oil, eggs, sugar, cinnamon, nutmeg, brandy (dark rum, whiskey or orange juice) and vanilla. Whipping is not necessary, fast enough to mix well.

Then stir in apples and cranberries. The dough will be quite thick. Fresh cranberries you can substitute dried or raisins, dried apricots, walnuts, chocolate chips.
Spoon the batter into the prepared pan.
