Cooking
Sift flour with soda, add sugar and stir.
Cold butter cut into pieces or grate. Grind the flour mixture into crumbs. For this recipe I used a butter TM "Ekomilk". In the recipe, the proportion of oil is large enough, so it must be of excellent quality.
The oil-flour crumbs, add 2 egg yolks...
Next, sprinkle on 1 tbsp yogurt, knead the dough. It is soft, the ball is going. Yogurt may need more or less as its density is different.
With a spoon spread the dough in the form for baking, which is pre-pave with baking paper and brush with oil. Bake in a preheated 180 degree oven for about 10 minutes. Be guided by your oven!
For the filling, pear peel, RUB on a grater and sprinkle with lemon juice - 1 tbs.
While baking the bottom layer, prepare the second dough. 2 protein is already there. Another egg divided into whites and yolks. 3 protein until put into the refrigerator to cool. And the butter thoroughly with sugar. You can use powdered sugar. Then whisk.
To sugar-butter mix add 1 egg yolk and remaining lemon juice and beat again.
Sift the flour into the oil mixture and stir.
Chilled proteins vzbit to strong peaks. I did it with a blender.
Parts add the beaten egg whites into the batter. Half of you can mix it with a mixer, and the second half to add gently, drawing a figure eight. The dough was very light and airy.
When the first layer is already baked, pull it from the oven and spread on top of the grated pear.
The third layer is a second protein dough.
Sprinkle with almond petals. The future to cover the cake with foil and bake at 175 degrees for about 20 minutes. After a time, if the midway is not yet ready, turn off the heat and leave to cool.
The finished cake to pull out of the oven. And cool to the end.
