Cooking
Currants wash, dry, remove the stalk (I do this with a fork). If you don't have ground poppy seeds, just grind the poppy seeds in a coffee grinder.
To remove the zest from half of a lemon.
Separate the yolks from the whites. Whip whites into stiff foam with half the sugar.
Beat the yolks with the other half sugar and vanilla sugar. Add the lemon zest and whisk, gradually adding the sunflower oil.
In the yolk mass add the beaten egg whites. Little stir.
Add the flour, poppy seeds and currants. Stir gently with a spatula.
Form for baking grease oil, sprinkle flour and pour the batter into the pan. The oven can be in the form of a diameter of 25 cm, I baked in a round cake pan.
Put the pie in the preheated oven and bake at a temperature of 160 degrees for about 45-50 minutes. Readiness, as always, to verify a match. Ready cake cool completely and remove from the mold.
Sprinkle the pie with icing sugar and decorate with brushes of red currant and mint leaves.
