Vegetable “spaghetti” with honey-mustard sauce
Quick fried mix vegetables with a very tasty dressing in a Mediterranean style. Vegetables are called "spaghetti" because they are cut thin long shavings. This can be done by means of special cuts or knife, or you can just slice them thin as long as possible strips. All the vegetables are quite soft taste, so in this recipe, the main role is played by the delicious flavorful filling which will be suitable to many salads and baked vegetables.

Ingredients

  • Carrots

    4 piece

  • Zucchini

    2 piece

  • Radish

    2 piece

  • Anchovies

    30 g

  • Sundried tomatoes

    50 g

  • Lemon

    0.25 piece

  • Garlic

    1 Tbsp

  • Vinegar

    2 Tbsp

  • Mustard

    1 Tbsp

  • Honey

    2 Tbsp

  • Sunflower oil

    70 ml

  • Salt

  • Black pepper

1. Wash the vegetables, carrot and radish and garlic clean. Mince the vegetables fine as long strips and chips.

2. Sun-dried tomatoes and anchovies finely chopped. (If you use).

3. Crush the garlic in a mortar with a pinch of salt to a paste. Mix the vinegar, lemon juice, mustard, honey and garlic smooth.

4. Gradually, a thin stream pour in the oil, constantly whisking the mixture with a whisk until the formation of the emulsion. Add salt and pepper to taste.

5. Heat a few tablespoons of oil in a wok or frying pan with a thick bottom. Put in hot oil carrots and cook 2 minutes, stirring constantly and slightly tossing her up in the method (stir fry), then add the radish, cook for another 2 minutes, continuing to interfere in the same way, add the zucchini, sun-dried tomatoes and anchovies (if using) and cook another couple of minutes. Pour hot vegetables honey sauce, stir and turn off the heat.
