Peppers stuffed with quinoa and vegetables
Peppers stuffed with "Quinoa mix" with braised zucchini, eggplant and pepper Piri-Piri. Bought last Saturday Quinoa mix from the Mistral, the first time I tried this miracle - sorry that took a little, well, very tasty - cooked stuffing for peppers - almost all did not eat. The dish I spicy, fragrant, the peppers Piri Piri immediately set the tone, but how delicious it came out!!! My husband even did a separate chicken - so he did not even try was that for us, to be honest, the event is almost unbelievable. But delayed for lunch to work the peppers left in the form of supplements. And gravy, vegetables what!!! Just try it.

Ingredients

  • Pepper

  • Quinoa

    0.5 cup

  • Salt

    1 tsp

  • Peppers red hot chilli

    5 piece

  • Tomato paste

    200 g

  • Zucchini

    1 piece

  • Eggplant

    1 piece

  • Tomato

    1 piece

  • Olive oil

    3 Tbsp

  • Rosemary

    1 piece

We'll need Quinoa mix from TM Mistral. The ingredients found nothing, so said the quinoa - like it's the same thing.

Measure out of it, fill with water in the ratio: 1 part Quinoa mix - 2 parts water.

Bring to a boil, prosim a bit low down the fire and cook approximately 15 minutes.

While cooking, make peppers.

Cut them in half and remove the seeds.

Chop the peppers Piri Piri and mix them with homemade tomato sauce or simply with a nice tomato paste

Zucchini cut thin slices. At the bottom of a deep casserole put 1/3 of the sauce with the peppers on the sauce - zucchini in a single layer (leave about half of the zucchini).

Another third of the sauce, add to cooked Quinoa mixture.

Mix and stuffing for the peppers ready.

Fill with stuffing our peppers and spread on a vegetable cushion.

On top lay the remaining zucchini and leaves of rosemary.

Eggplant cut into thin slices.

And spread on top of zucchini.

A little salt, spread the remaining tomato sauce.

Sprinkle with olive oil.

And put the chopped tomatoes, add a little water.

Simmer on low heat about 30 minutes, until the vegetables are soft.
