A slice of crumbly delicate dough with addition of oat flakes and fragrant, juicy fillings of fresh fruit and berries - a great start to the day. Cooking
Prepare the required products.
To prepare the dough. Oatmeal grind (in a coffee grinder). I have oatmeal whole grain TM Mistral. Then in the bowl of a blender add the flour, crushed corn flakes, sugar, salt, baking powder and mix well with a whisk. Add diced chilled butter and beat until the mixture resembles coarse crumbs. Allowed the presence of small pieces of butter no bigger than a pea.
Pour kefir or any fermented milk product that is on hand. With a fork mix the flour with yogurt. Quickly form the dough into a ball.
The dough flatten into a disk. Wrap in cling film and put into the refrigerator for at least 1 hour to cool.
Apricots wash, remove seeds, cut into quarters. In a bowl add the apricots, sugar, lemon zest, 1 tsp starch, vanilla and mix gently.
Chilled dough roll out on floured surface. I rolled out directly on the silicone Mat, which I will bake. In this case there is no need of transferring the biscuits on a baking sheet. So I advise you to either roll out on a silicone Mat or on parchment.
The dough in the center, sprinkle with 1 tsp of starch. Who doesn't love starch, can sprinkle with crushed biscuits or semolina. To lay out a circle of apricots and cherries, stepping back from the edge of 5-6 cm.
Wrap the dough over the filling, forming pleats. Yolk mix with milk to lubricate the edges of the biscuits. Sprinkle on top of cereal. Put the biscuits on a baking sheet. I just shift the Mat with a biscuit on a baking sheet. Bake in pre-heated to a temperature of 180-190°C oven for about 40-45 minutes or until Golden brown. Be guided by your oven.
