Corn muffins with poppy seeds and dried apricots
In almost any printed publication you can find the page with the recipes. In one of these publications my mother, always buying all sorts of magazines and a newspaper (a big fan of crossword puzzles), read an interesting recipe Lenten cake! And knowing my love for baking and in General to the development of new recipes, of course shared it with me! Very easy to prepare a cake from simple ingredients! Turned out delicious, with a rich taste, despite the rather modest set of ingredients, and with a very beautiful cut!

Ingredients

  • Mac

    200 g

  • Sugar

    200 g

  • Corn flour

    125 g

  • Water

    220 ml

  • Vegetable oil

    125 ml

  • Flour

    220 g

  • Leavening agent

    1 pack

  • Vanilla sugar

    1 tsp

  • Raisins

    80 g

  • Dried apricots

    100 g

Cooking

In a bowl, combine poppy seeds, sugar and corn flour.

Pour boiling water and mix well. Leave aside for 30-40 minutes.

Raisins and dried apricots pour hot water, allow to stand for 10 minutes, then drain the water, Pat dry with paper towel. Dried apricots cut into small pieces.

To present poppy-corn mixture, add vegetable oil, vanilla sugar, sifted wheat flour and baking powder. Mix thoroughly (the dough will be thick, spoon drains).

Add the raisins and dried apricots and mix gently.

Cake pan to cover with baking paper, spoon to spread batter, smooth the top. Bake in a preheated 180 degree oven for 20 minutes, then cover the form with foil and bake for about 15-20 minutes until tender. The finished cake remove from the oven and allow it to fully cool down.
