Description
Ginger cake is an unusual combination of spices (ginger, cloves, allspice, cinnamon, honey) cream and mascarpone! It was love at first bite!

Cooking
In a saucepan combine: sugar, honey, all the spices, bring to boil, remove from heat. Add soda (not hydrated). The mix down and turn white. Add the diced butter, stir, beat the egg and add the flour, knead the plastic dough.
Roll sausage and divide into 8-9 parts. Roll turns the cakes (table sprinkle liberally with flour, the dough may stick and tear, but that's OK) and bake in a well preheated oven for 5 min.
Whip cream, add powdered sugar (if the Mascarpone, then gently stir in whipped cream and add a little salt!, it's a nice taste).
Lubricate the cooled cakes with cream, Boca sprinkle shredded scraps of cakes.
Decorate the top with blueberries, red currants on a branch (either raspberries, strawberries) and mint! And shavings of chocolate mint Lindt or melt chocolate and make streaks of chocolate! You can eat almost immediately (within an hour) - will be slightly crunchy. Either overnight in the fridge would be super delicate and airy!
