Semolina muffins with banana and coconut
I want to introduce you another easy and quick version of the Christmas dessert. Muffins without flour, but semolina. Tender and flavorful! Come and help yourself!

Ingredients

  • Semolina

    2 cup

  • Yogurt

    2 cup

  • Chicken egg

    2 piece

  • Sugar

    5 Tbsp

  • Salt

    1 pinch

  • Soda

    2 tsp

  • Banana

    2 piece

  • Coconut shavings

    60 g

  • Butter

    100 g

  • Powdered sugar

For cupcakes, I'll use semolina TM Mistral, it is always of the highest quality, which is very important when baking.

Mix yogurt, semolina, eggs, sugar, salt, melted butter and soda. All mix well and leave for 30-40 minutes.

Bananas cut into cubes and together with the coconut added to the batter and mix well.

Spread the batter into molds and bake in the oven at 180 degrees for 30-40 minutes.

When the cupcakes are cooled, sprinkle with powdered sugar. Muffins turn out a little sweet, but we eat them with honey or jam. If you want more sweet, put more sugar.
