It all started with the fact that I wanted potato pancakes. I really love them! But rarely cook them because they are fried and absorb a sufficiently large amount of oil. And I decided to experiment)). The result of the experiment surpassed all expectations)). The muffins turned out very tender, airy, and without a drop of oil! Tastes just like pancakes))

Cooking
On a fine grater grate the potatoes and squeeze it a little.
Immediately mix potatoes with eggs, yogurt, salt and soda. Then grate on a fine grater cheese and mix everything well.
Add the sifted flour and again mix well. Leave the dough for 20 minutes so that the flour is soaked and the soda reacts with the yogurt.
Then spread the dough on the molds. Put the muffins in a preheated 180 degree oven. I baked them for 45 minutes, until the top crust was delicious browned, and the toothpick came out dry.
That's the beauty turned out)). You can add to the dough any spices and seasonings to taste, any greens, garlic, onions. In General, all that you love!
