Fish-pumpkin pancakes
The first country pubs as well as the reluctance of the meat in the heat of summer has led me to create this recipe. But I think it is good for any time of year.

Ingredients

  • Fish fillets

    250 g

  • Zucchini

  • Chicken egg

    2 piece

  • Mayonnaise

    100 g

  • Bread crumbs

    5 Tbsp

  • Salt

Zucchini grate on a coarse grater, if very juicy, slightly overcome.

Fish cut into small dice.

Mix zucchini, fish, beat the eggs, add mayonnaise, 5 tablespoons bread crumbs, mix well, season with salt and pepper, add a pinch of Provencal herbs, mix well.

On a heated and watered with vegetable oil the pan to spread the resulting mass in a tablespoon.

When the pancakes browned, flip to the other side.
