Pumpkin muffins with mushrooms
We continue to struggle with the squash crops. Good, undemanding in cultivation, cheap, on sale, useful and universal in application. These muffins can take on a picnic, to work for a snack.

Ingredients

  • Zucchini

    200 g

  • Mushrooms

    150 g

  • Chicken egg

    1 piece

  • Yogurt

    0.5 cup

  • Leavening agent

    1 tsp

  • Vegetable oil

    3 Tbsp

  • Sugar

    1 tsp

  • Salt

    1 tsp

  • Flour

    1.5 cup

  • Cheese

    100 g

  • Greens

    1 l

Zucchini wash, peel, remove the seeds and grate.

Grate cheese on a grater.

Mushrooms finely cut, fry in butter. In my freezer there is always fried mushrooms in the stock (for example for pizza), so I don't fry had, only to crumble.

In a separate bowl mix the egg, yogurt, vegetable oil, salt and sugar, baking powder. The original recipe was slaked vinegar soda, but I didn't like too soda taste interrupts. Add flour.

Mix all that we have. Turns sticky dough. If you love greens, you can add finely chopped onion, parsley, dill. I did not add because I do not like greens in baked goods.

Fill molds about half. Bake at 180 degrees for 25-30 minutes until Golden brown.

The finished cupcakes are cooled, spread on a dish. Name is family and treat.
